Reduction of volatile acidity

We reduce the acidity level via the combination of membrane and resin technology.

The membrane system separates from the wine a stream (called permeate) rich in acid: by crossing a bed of resins, this is deprived of such acidity and reintroduced into the flow of concentrate returning from the initial tank. he quantity of treated permeate will determine the extent to which acidity will be knocked down (where permitted by current legislation).
